Recipe for Dal Khichdi

Prep time: 10 minutes

Cook time: 25 minutes

Makes: 2 servings

Ingredients

1 cup of basmati rice 
1/2 cup of tuvar daal/arhar ki daal
2 tablespoons of ghee
1 teaspoon cumin seeds 
a pinch of asafoetida
1 tablespoon of powdered coriander seeds
2 teaspoons of salt

Procedure

1. Firstly, wash the rice and dal together, then soak them for at least half an hour in water. 

2. Secondly, put the rice and dal mixture in a colander and allow the water to drain out. 

3. In a heavy-based saucepan, heat the ghee and add the cumin and the asafoetida.

4. Wait for the seeds to crackle, then add the rice and dal mixture and saute it over high heat until it’s mixed well and all the excess water dries up.

5.  Add the salt and coriander powder, and mix them well. 

6. Add 2 1/4 cups water and cover it, allow it to boil. Lower the heat and simmer for about 10 minutes, by which time the khichdi should be cooked and ready to serve.

7. If you’d like to make it spicier, add some more ground spices like garam masala and chilli powder.
