  • Pour two tablespoons of olive oil into a bowl or measuring cup and drizzle over the surface of the dough as evenly as possible–you want about 1/4 inch coating on top of each piece; rub in lightly with fingers until the oil is absorbed into the surface; cover with plastic wrap and let rest 30 minutes more at room temperature (or longer if possible).
